Introduction to food technology; Raw materials and their composition in ready food technology, reasaons of food deterioration and control, methods of physical food preservation (cooling, freezing, sterilisation, pastörisation, radiation, gas pressure, vacuum application, filtration), metthods of chemical food preservation (salting, smooking, preservation with acid and sugar, use of chemical protectives) and technics of biological food preservation, principles of quality control in cereal, fruit, vegetable, meat, milk, oil and ready foods. |
